RECIPE OF THE MONTH - February 2008
BAKED CHINOOK SURPRISE

Ingredients:
2 pounds salmon fillet            1/4 teaspoon salt                    1/4 cup grated Parmesan cheese
1/3 cup French dressing          1-1/2 tablespoon lemon juice    1 small can French Fried onions 
             

        Heat oven to 350 degrees F.
        Cut salmon fillets into individualized sized portions (figure 3/4 pounds per person).
        Place salmon in a shallow baking dish and combine French dressing, lemon juice, and salt.
        Cover fish with this mixture, and marinate for 30-45 minutes.
        Turn fish over once in marinade, and place in dish.
        Crush onions and add cheese.
        Sprinkle on cheese/onion mix over fish and bake in 350-degree F oven for 30 minutes.
