RECIPE OF THE MONTH - May 2007
FISH BOIL

Serves 8

Ingredients:
3 lbs fresh fish fillets                1/4 lb melted butter
8 medium sized potatoes           6 medium white onions        2 cups salt

        Place potatoes and 8-10 quarts of water in a 12 quart trout kettle or similar large pot and bring to a boil.
        Slowly add 1 cup of salt, bring to a boil again, and boil for 12 minutes.
        Add onions, and boil for 6 minutes.
        Place fish in a basket (or open pot) and lower into the water.  The boiling water will stop, so bring the
            water back to a boil and add 1 cup of salt slowly.  Boil 11 minutes more.
        Drain off water and serve with melted butter, parsley, and/or lemon.
        Remember, always bring to boil before adding salt.
